Taste Idukki with Chennai’s Ura Gelato by ITC Grand Chola Print: A Sampler of Nostalgia

Brightly lit and thoughtfully designed, ITC Grand Chola’s gelato bar, named Yura – Artisanal Scoops, is inspired by the Japanese word literally meaning ‘beautiful dream’, and offers an imaginative selection of gelatos, frozen yogurt, sugar-free options and sorbets.

ITC Grand Chola’s pastry chefs, Chef Sridhar Manickam and Chef Deepti Joji, who designed the menu, explain that the 10 flavors were the result of extensive experimentation, trial and error. “We wanted to create sweets that would appeal to all age groups, including international guests,” says Chef Deepti, adding that they will also launch softies in the future.

To support this approach, ITC has sourced state-of-the-art equipment from Italy. Chef Sridhar says, “The pasteurization, mixing, homogenization and aging steps are fully automated and precisely controlled. We take great care to ensure that we use only the best ingredients, while consciously supporting local produce wherever possible. For example, in our Idukki Vanilla flavour, the vanilla is sourced directly from farmers in the Idukki region of Kerala.”

Yura’s current offerings include Alphonso Mango Sorbet, French Raspberry Sorbet, Blueberry Yogurt, Filter Kapi, Miso Caramel, Chocolate (64% Dark), Idukki Vanilla Gold, Cookie & Toffee, Saffron & Apricot and Sicilian Pistachio. The sugar-free category includes vanilla and chocolate. “We have adopted the Japanese miso flavor, which traditionally uses fermented soybeans and ensured that the salty flavor lends well to the gelato texture and flavor. The blueberries are slow-cooked for over three hours before going into our yogurt. All of our gelatos are vegan and we do not use additives or preservatives,” says Chef Sridhar.

After sampling the range, the cookie and toffee emerged as personal favourites, instantly evoking childhood memories. In second place were Saffron and Apricot, which provided a rich and nutty experience, and Filter Coffee which gave a warm, familiar appeal. Amidst the sorbets, mango stood out with its bright, refreshing flavour.
