Alba Trading Company (ETC). which specializes in fresh handmade pasta, has introduced a weekend brunch with a six-course authentic Italian dining experience. The small restaurant has been open exclusively for dinner since launching in December 2023, which has had a reputation for queues, so brunch will make reservations easier.
“During the initial months, we focused on perfecting the art of handmade pasta, ensuring sustainability, and maintaining standards. A few months ago, we started offering private lunch services, and now, we are excited to launch Weekend Brunch, available only on weekends at St. Mary’s,” says Anand Madhan, Managing Partner of ETC.

The meal begins with antipasti, featuring an unlimited selection of fresh focaccia served with a variety of dips, different from the dinner menu. The second course includes a curated selection of cheeses or meats, presented in a charcuterie cone, with the option to include prosciutto as an add-on. Third courses include cold salads and small plates in carpaccio or crudo style, offering light and tasty dishes before the main meal.
For the fourth course, secondi, guests can choose between vegetarian and non-vegetarian dishes. The fifth course showcases a brunch special, featuring ETC’s signature handmade pasta as well as egg-based dishes in keeping with brunch traditions. This course balances sweet and savory dishes for both adults and children. The meal concludes with dolci or dessert, featuring homemade eggless tiramisu and oat milk panna cotta as dairy-free options. Unlimited servings of Americano, espresso, cappuccino, black tea and juice of the day will be available.

Anand says each course is designed to accommodate both meat and vegetarian preferences, and the menu will be updated frequently, introducing premium meats like veal, mussels and oysters to enhance the Italian brunch experience.
“There is currently no slotted seating, although this may be introduced in the future. Walk-ins are welcome, and guests must specify their vegetarian or non-vegetarian preference when booking. They must select their preferences in advance for the second, third and fourth courses, with dishes served sequentially, course-wise, straight from the kitchen to the table.”
